Melon Mint Gazpacho Recipe

Ingredients:
- 1 ripe melon
- A quarter of small red onion
- 103 springs of fresh mint
- 1 teaspoon of olive oil
- Pinch of salt
Directions:
- Peel the melon and remove seeds, cut them and put them in a blender.
- Add the onion and mint leaves and blend. Add the olive oil and the salt.
- Continue blending.
- Pour into glasses and garnish with a slice of melon and a mint leaf.
- Refrigerate before serving.
