Melon Mint Gazpacho Recipe

Ingredients:

  • 1 ripe melon
  • A quarter of small red onion
  • 103 springs of fresh mint
  • 1 teaspoon of olive oil
  • Pinch of salt

Directions:

  1. Peel the melon and remove seeds, cut them and put them in a blender.
  2. Add the onion and mint leaves and blend. Add the olive oil and the salt.
  3. Continue blending.
  4. Pour into glasses and garnish with a slice of melon and a mint leaf.
  5. Refrigerate before serving.
