Ingredients:

  • 4 cups of cooked rice
  • 2 spring onions, finely
  • 1 cup finely chopped vegetables (par boiled for 2 minutes.)
  • 3/4 tbsp of vinegar
  • Salt and black pepper to taste
  • 1 1/2 tbsp sesame oil or peanut oil

Directions:

  1. Heat the sesame oil in large wok, add the spring onion whites and stir for 1 minute on high.
  2. Add the rest of the rest of the vegetables and toss them on high for 3 to 4 minutes. Add salt and pepper.
  3. Cook for 1 minute. Add the cooked cold rice and combine well leave on high for one minute.
  4. Add vinegar and cook for one more minute.
